
As we get closer and closer to warmer months, I find myself craving classic Cowboy Caviar. I’m a fan of anything scoopable, crunchy, and chip-worthy, but I’ve learned that if I want it to actually hold me over, it needs more than just beans and veggies.
So this version became a hybrid: part cowboy caviar, part taco chicken bowl, fully meal-prep friendly, and still absolutely chip-dippable.
It’s also one of those rare meals where both my picky teen and I can eat the same base, but build it completely differently.
For Her: The “Meat-and-Cheese Purist”
Ground chicken, taco seasoning, salsa verde, black beans, corn, and feta. For her, I kept it simple, warm, and protein-heavy.
For Me: The “More Toppings, The Merrier” (Dairy-Free & Gluten-Free)
Same base, but loaded up with avocado, extra lime, jalapeños, cilantro, salsa, and crunchy greens instead of relying on cheese or dairy.
The “Fast & Easy” Base
The secret to keeping this meal prep actually doable is building one flexible base that works for both of us.
The Protein
Heat a large skillet over medium heat, and sauté diced red onion until soft and fragrant. Add lean ground chicken and cook until browned. Season with taco seasoning and a splash of water, coating evenly.
Once the chicken is cooked through, stir in salsa verde and simmer for a few minutes, until everything is juicy and well combined.
The Fiber Boost
In a large bowl, combine:
- Black beans
- Black-eyed peas (or extra black beans if you prefer)
- Fire-roasted corn
- Diced bell peppers
- Jalapeño
- Cilantro
- Lime juice
Toss everything together until bright, fresh, and well mixed.
The Assembly
From here, everything becomes customizable.
She keeps hers simple:
- Warm chicken + beans + corn mixture
- A generous layer of feta (or some real cheddar cheese, since she isn’t intolerant)
- Sour Cream
- Served with corn chips or baked scoops
I build mine like a full bowl:
- Chicken + cowboy caviar base
- Fresh avocado
- Extra lime juice
- Jalapeños + cilantro
- Optional shredded lettuce or cabbage for crunch
- Salsa verde drizzled on top
Same foundation, two completely different directions.
The “Cool” Finish
Once everything is assembled, this is where the bowls really come alive.
While one plate stays warm and simple, mine turns into something fresher and brighter with toppings like:
- Guacamole or sliced avocado
- Fresh salsa
- Extra jalapeños
- Cilantro
- A handful of crunchy greens
It ends up being one base recipe, but it never feels repetitive across the week, which is the whole point of meal prep in the first place.
Final Thought
This version keeps all the things I love about cowboy caviar: freshness, crunch, lime, and chips, but turns it into something that actually works as a full meal instead of just a side dish.
And somehow, it still manages to be one of the few dinners we don’t negotiate over.
